Ajvar Recipe: The Simplest Balkan Version

Ingredients (1 medium jar)

  • 10 red bell peppers
  • 2 cloves garlic
  • 3 tablespoons olive oil
  • 1 tablespoon vinegar or lemon juice
  • Salt to taste

Instructions

  1. Roast the peppers: Preheat the oven to 220°C. Place peppers on a tray and roast until skins are charred and blistered, about 25–30 minutes.
  2. Steam and peel: Transfer roasted peppers to a bowl, cover, and let steam for 10 minutes. Peel off skins, remove stems and seeds.
  3. Blend the spread: Place the flesh in a blender or food processor. Add garlic, oil, and vinegar or lemon juice. Blend until smooth.
  4. Fry the mixture: Heat a pan with a little sunflower oil over medium heat. Pour in the blended peppers and cook for 10–15 minutes, stirring often, until thickened and glossy.
  5. Season and store: Taste and season with salt. Spoon into a clean jar and let cool before serving.
