Ajvar, one of the most disputed foods of the Balkans, whoever has tried it knows it: it’s addictive! If you’re searching for the best ajvar recipe, you’ve come to the right place. This smoky Balkan red pepper spread is silky, flavourful, and perfect on bread, grilled meats, or as a dip. With only five ingredients, this ajvar recipe is simple, authentic, and worth making at home.
Ingredients (1 medium jar)
- 10 red bell peppers
- 2 cloves garlic
- 3 tablespoons olive oil
- 1 tablespoon vinegar or lemon juice
- Salt to taste
Instructions
- Roast the peppers: Preheat the oven to 220°C. Place peppers on a tray and roast until skins are charred and blistered, about 25–30 minutes.
- Steam and peel: Transfer roasted peppers to a bowl, cover, and let steam for 10 minutes. Peel off skins, remove stems and seeds.
- Blend the spread: Place the flesh in a blender or food processor. Add garlic, oil, and vinegar or lemon juice. Blend until smooth.
- Fry the mixture: Heat a pan with a little sunflower oil over medium heat. Pour in the blended peppers and cook for 10–15 minutes, stirring often, until thickened and glossy.
- Season and store: Taste and season with salt. Spoon into a clean jar and let cool before serving.
Tips for Perfect Ajvar
- Use ripe red bell peppers for the sweetest flavour.
- Char the skins well — that smoky taste makes the spread special.
- Adjust texture by adding more olive oil for a silkier result.
Hint: goes well with Macedonian Baked White Beans (Tavche Gravche)!
