Macedonian baked beans, known as Tavče Gravče (literally “pan beans”), is one of the most beloved dishes across the Balkans, especially in the countries of the former Yugoslavia. Celebrated as the national dish of North Macedonia, this hearty bean dish is traditionally baked in clay pots and served as pure comfort food. With just a few simple ingredients, you can bring authentic Balkan flavors straight to your table.
Ingredients (4 servings)
- 500g white beans (soaked overnight)
- 2 onions (chopped)
- 2 red peppers (chopped)
- 4 tbsp sunflower oil (or olive oil)
- 1 tbsp paprika powder (sweet or smoked)

Instructions
- Prep the beans: Soak beans overnight in cold water. Drain, rinse, and boil in fresh water until tender but not mushy (~40 min). Drain and set aside.
- Fry aromatics: In a skillet, heat oil. Add chopped onions and peppers, sauté until softened and golden (~10 min). Stir in paprika.
- Combine: In a clay or ovenproof dish, mix cooked beans with the onion-pepper mixture. Add a little warm water to keep it moist. Season with salt and pepper.
- Bake: Place in preheated oven (180°C / 350°F) and bake uncovered for 30–40 min until beans develop a golden crust on top.
- Serve: Garnish with parsley and serve hot with bread or salad.
Tips
- For extra authenticity, use a clay pot and bake until the top slightly caramelizes.
- You can add dried chili or bay leaves for aroma (traditional, but optional).
- Best enjoyed with warm bread and Shopska salad.
